Whipped Ricotta Toast

Serves 3

Whipped Ricotta

1 cup ricotta cheese

2 tbsp heavy cream

1 tbsp powdered sugar, sifted

½ tsp vanilla extract


Toast

3 thick slices sourdough bread

A few pats of butter

¼ cup Blueberry Orange Spread


  1. To make whipped ricotta: Use an electric hand mixer or a small food processor to whip ricotta cheese, cream, powdered sugar, and vanilla extract until smooth. Set aside until step 3.
  2. Spread a bit of butter on both sides of the bread. Toast buttered bread on a skillet until both sides are golden brown. Alternatively you can use a toaster oven.
  3. Smear a thick layer of whipped ricotta on each slice of toast and top with a heaping tablespoon of Blueberry Orange Spread.
