Spiced Mango Street Corn Nachos

Serves 4


1 tbsp vegetable oil

1 ½ cups corn kernels, fresh or frozen

½ jalapeno, seeded and minced

Juice and zest of 1 lime, divided

Salt, black pepper, and paprika to taste

3 tbsp sour cream

1 tbsp mayonnaise

1 (368g) package tortilla chips

2 cups shredded Monterey Jack cheese

¼ cup Spiced Mango Chutney

Green onion or cilantro, to garnish


  1. Heat oil in a large skillet over medium high heat. Once hot, add the corn kernels and cook until charred. Then turn off the heat and stir in minced jalapeno and ½ tbsp of lime juice. Season with salt, black pepper, and paprika to taste.
  2. In a small bowl, whisk together sour cream, mayonnaise, 1 tbsp lime juice, and lime zest until smooth. Season with salt.
  3. Preheat oven to 400°F. Layer tortilla chips with shredded cheese, dollops of Spiced Mango Chutney, and corn mixture. Bake until the cheese is melted, about 5-10 minutes.
  4. Garnish with lime crema and green onion. Serve hot.
