Chai Apple Sour Cream Coffee Cake
Yield: one 8” cake

1/2 cup butter, softened to room temperature
2/3 cup sugar
2 eggs
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp sea salt
1 cup sour cream
1 small apple, diced
1/4 cup Chai Apple Spread
Streusel
1/2 cup butter, melted
1 tbsp cinnamon
1 cup flour
2/3 cup brown sugar
Instructions
Preheat the oven to 350°F. Grease an 8” round pan and line the bottom with parchment paper. A pan with a removable bottom is ideal.
In a large bowl, beat softened butter and sugar together until pale and fluffy. Then beat in eggs.
In a medium bowl whisk together flour, baking powder & soda, and salt.
Alternate adding the flour mixture and sour cream into the butter mixture, mixing until almost incorporated each time.
Fold in diced apples.
In a small bowl, use a fork to mix the streusel ingredients together until all the flour is absorbed.
Pour half of the batter into the pan. Sprinkle with half of the streusel. Top with the remaining batter, dollop Chai Apple Spread on top and cover with the rest of the streusel.
Bake for 60-65 minutes, or until a toothpick inserted into the centre comes out clean.
