Chai Apple Buttermilk Pancakes

Ingredients

Pancakes

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • 1 ¼ cups buttermilk
  • 1 egg
  • 2 tbsp vegetable oil or melted butter, plus extra for cooking

Toppings

  • 3 apples, chopped
  • ¼ cup Chai Apple Spread

To Serve

  • Greek yogurt
  • Toasted pecans
  • Maple syrup or honey

Directions

  1. In a baking dish, toss chopped apples with Chai Apple Spread until combined. Bake at 350°F for 25-30 minutes, or until soft (like apple pie filling).
  2. In a large mixing bowl, whisk together flour, sugar, baking powder and soda, and salt. 3. In a separate bowl, whisk together buttermilk, egg, and oil or butter until homogenous. 4. Pour all the liquid ingredients into the bowl with the dry ingredients and gently whisk together until no dry flour is visible but some lumps remain. Lumpy batter will produce fluffy pancakes!
  3. Heat a skillet over medium heat and grease lightly with vegetable oil or butter. Use 1/3 cup batter per pancake. Cook until the edges appear dry and bubbles pop and stay on the surface, then flip and cook until golden brown on the other side.
  4. Serve pancakes warm with Greek yogurt, baked apples, pecans, and a drizzle of maple syrup or honey.

TIPS

Preheat an oven to 175°F (or the lowest temperature). Keep a cookie sheet with a wire rack on it in the oven. Place cooked pancakes onto the rack as you go—this will keep the pancakes warm while you finish cooking the whole batch.
